Strawberry Treats

Strawberries have been growing in the wild for thousands of years. They are among the first fruits of the spring to be harvested.

Strawberry Treats

Ingredients:

1 1/2 pints strawberries
1 cup sugar
2 tablespoons lemon juice
1 cup whipping cream
2 egg whites
Dash of salt
Dash of cream of tartar

Crush strawberries and cook with sugar over low heat until sugar is dissolved and the strawberries are soft. Stir in lemon juice. Refrigerate until cool.

Whip the whipping cream until stiff. Separately, beat egg whites with salt and cream of tartar until stiff. Fold both whipped ingredients with the chilled strawberries. Pour mixture into a mold or into ice cube trays. Freeze until solid.
